Sushi has come to St Pancras Station
We were brought on board to help bring Sushinoya to life- a new grab-and-go concept offering ‘omakase quality’ sushi… without the wait.
Now open in the heart of London’s iconic St Pancras Station, Sushinoya combines speed and convenience with uncompromising freshness and flavour.
The concept comes from founder Dong Hyun Kim, best known for launching Wasabi, Kimchee and Kineya Mugimaru (located just next door).
With Sushinoya, his goal was to raise the standard for high-quality sushi in a fast-paced setting- serving sushi cut from whole fresh fish and offering a wide selection that includes both classic favourites and more premium varieties.

The Fit-Out Journey of Sushinoya
Our client, Kim, acquired the unit- formerly home to Yo! Sushi, and conveniently located right next door to his existing restaurant, Kineya Mugimaru.
Located in the open concourse of the station, the works began with the station team carrying out the initial strip-out of the existing space.
The first stage of the fit-out involved chasing out the floors to install new plumbing and electrical systems that aligned with the revised layout. This was followed by creating structural floor openings to accommodate the steelwork necessary for supporting the bespoke joinery features. The entire floor was then re-tiled ahead of the joinery installation.


The main servery counter was custom-built and installed on a raised platform, designed to showcase freshly prepared sushi while also providing a functional space for chefs to cook and serve in full view of customers.
Around the front, you’ll find self-service ordering screens, giving customers the flexibility to order at the counter, online, or via express kiosks – extremely helpful during peak commuter hours!
One of the more technically complex elements was the installation of the illuminated totem sign at the entrance. Designed by Sushinoya and manufactured and constructed by our team, the bespoke structure features a metal framework clad in walnut and corian, with integrated backlit LED lighting. The sign had to be securely drilled into tiled surfaces to achieve a seamless finish, and its weight, size, and installation timing demanded precise coordination and care.


Navigating a Fit-Out in St Pancras Station
Delivering a shop fit-out within a busy station like St Pancras comes with its own set of logistical challenges. With the site located in the heart of the station’s open concourse, we had to work around constant foot traffic, strict access controls, and tight schedules.
All deliveries and removals were carefully coordinated to take place outside of the station operating hours. Working behind hoarding, our team ensured minimal disruption to passengers and surrounding retailers, maintaining a smooth workflow despite the constraints of the live environment.

Collaboration with the Client and Design Team
Throughout the project, we worked closely with Sushinoya’s owner, Kim, and designer Julie Suttle.
From the start, the fit-out and delivery process was managed entirely in-house, ensuring clear and consistent communication.
Weekly meetings provided the structure needed to review the progress of the project and implement changes efficiently. This collaborative approach allowed for a smooth handover to trades and kept the project on track (despite the complex station environment)!
This partnership has been a positive one, with the success of this project laying the foundation for potential future collaborations.
